Someone had mentioned that their charcuterie didn't turn out, so I asked him to comment here about it. (So sorry Dave, I'd thought it was Mel!) DAVE comments: "The skipped steps I wrote about were My Bad! I didn't do enough research first. All the Charcuterie books you've posted are a little too general to safely cure meats. For example, they don't mention the possibility of Botulin toxins forming or that a simple air bubble is a serious no-no. That being said, if they pique someone's interest or as in my case their salivary glands, it's a good posting. A short freebie booklet is a good starting point for further research. Now all I need is a cost-effective way to distill my well water for the humidifier and I'll try the next batch.
